In 2017, Cornish Kern beat over 3,000 cheeses from across the world to be crowned Supreme Champion at the World Cheese Awards. One taste and it’s obvious why.

Made by Catherine Mead OBE and her team at Lynher Dairies in Cornwall — the same hands behind Cornish Yarg — Kern is a different beast entirely. Floated in a briny bath, sealed in breathable black wax, and left to mature for up to 20 months, the result is a hard cheese of extraordinary depth: toasted hazelnuts, caramel, a touch of smokiness, and a slightly crystalline texture that only comes from serious, patient ageing.

This is the centrepiece of any serious cheeseboard.

THE CHEESE

Cornish Kern starts with milk from Ayrshire cows — a breed known for producing naturally rich, creamy milk. The recipe draws from Gouda-style cheesemaking but uses Alpine starter cultures, which is what sets it apart from anything else in British cheesemaking. The influence of those cultures gives the paste a dense, smooth character — more Comté than Cheddar — with a bright, nutty sweetness and a rich depth of flavour that only comes from lengthy maturation.

Cornwall’s mild climate allows cows to graze outdoors year-round, and that grassy sweetness from Cornish pastures comes through clearly in the finished cheese. You can taste where it comes from.

THE NAME

“Kern” means “round” in Cornish — a nod to the truckle shape and its roots in Cornish heritage. It’s a small detail that tells you everything about how seriously Lynher Dairies takes what they make.

ON THE CHEESEBOARD

Serve at room temperature — straight from the fridge does it no favours. It holds its own against full-bodied whites like Chardonnay or a well-aged red, and pairs beautifully with honey, fig chutney, toasted nuts and dried fruit to play off its caramel notes. For something more casual, eat it in rough shards straight off the block.
