Lincoln Red Beef is one of the best flavoured breed’s of beef and is a rare native breed. Our buyer selects the very best Lincoln Red’s, mainly from near Louth in Lincolnshire. We also have a top up of cuts from native breed beef which again is carefully hand selected for us by another buyer who we work closely with. We look for size and for a good covering of fat for flavour. Each cut is prepared by our specialist butchers, ensuring care and quality in every cut.
Rushing this one will be a disaster, so take your time. Taken from the leg, this meaty cut is a true slow cook cut. It is fairly lean but the connective tissue will melt during cooking adding to the flavour.
How to cook Shin of Beef
Cook from room temperature. Cook in a slow cooker on low for at least four hours. Or alternatively cook for three-four hours on 160°C, Gas Mark 2. Best cooked with juices/sauces. Allow to rest before serving.
