Cooking & Serving Tips

Slow Cook / Braise: Brown the shanks, then add stock and slow cook for 2½ – 3 hours until tender.

Oven Roast: Cook at 160 °C (fan 140 °C) for 2 – 2½ hours in a covered dish with vegetables and a splash of wine.

Serve With: Creamy mash or buttery polenta, green beans and a mint jus for a restaurant-quality finish.

Chef’s Tip: Use the cooking liquid as a base for a glossy sauce — simply reduce and stir in a teaspoon of honey for a perfect sweet-herb balance.
