Cooking & Serving Tips

Slow Roast: Preheat oven to 160°C (fan 140°C). Rub with olive oil, garlic, rosemary and sea salt. Roast for 3–3½ hours until tender and golden.

Braise: Cook gently in stock or wine for 2½–3 hours for melt-in-the-mouth results.

Serve With: Roasted root vegetables, minted peas, and gravy made from the pan juices.

Chef’s Tip: Rest the joint for at least 20 minutes before carving to keep it juicy and easy to slice.
