Cooking & Serving Tips
Roast: Pre-heat oven to 190 °C (fan 170 °C). Season with garlic, rosemary, and olive oil. Roast for 25 minutes per 500 g plus 25 minutes for medium, or longer for well done.
Rest: Allow to rest for 15–20 minutes before carving to keep the meat juicy.
Serve With: Mint sauce, roasted root vegetables, and a glass of rich red wine for a timeless British meal.
