Matured for about 18 months, Old Amsterdam has a smooth and waxy texture with a deep, mellow flavour. Hints of caramel and marmite make this a beautiful gouda. It’s slightly granular feel makes it pair well with pistachio and other nuts as well as figs.

Old Amsterdam was born in the mid 1980’s by the Westland family, who developed a cheese with crystals. The uniqueness of Amsterdam inspired the Westland family. The first cheeses were matured in the middle of Amsterdam, in a building on Lijnbaansgracht. The many contrasts in the city and its people pulled on the heartstrings of the family and found its way to Old Amsterdam.

Each piece is wrapped and then put in a bag. Keep refrigerated but best served at room temperature.
