Caramelised Red Onion Sausage Tray Bake

In a hurry? Need an easy mid-week meal? This Sausage Tray Bake is not only quick and easy to make but also packs a great flavour. Made with one of our most popular sausages, Pork and Caramelised. Serves 4-5 people.

 

Ingredients

  • 8 Pork & Caramelised Red Onion Sausgaes
  • 2 Red Peppers (chopped)
  • 1 Yellow Pepper (chopped)
  • 1 Green Pepper (chopped)
  • 4 or 5 medium sized Potatoes (chopped, skin on)
  • 200g Tomatoes chopped
  • 500g Cooked Lentils
  • 5 tbsp Olive Oil
  • 2 Chicken Stock Cubes
  • 4 tbsp Basil (chopped)
  • Salt & Pepper for seasoning

Method

STEP 1

Preheat oven at 200°C/Gas Mark 4. Meanwhile, cook sausages in a hot pan with a little oil, until golden brown.

STEP 2

Deseed peppers and chop into small chunks and put in a bowl. Wash the potatoes and keep the skin on and cut into small cubes and mix in with the peppers. Crumble up the stock cubes and cover the ingredients in the bowl along with the Olive Oil. Season with Salt and Pepper and mix the ingredients. Pour the ingredients into a baking tray and add the Tomatoes and Lentils.

 

STEP 3

Add the cooked the Sausages on top of the ingredients and place tray in the centre of the preheated oven. Cook for approx 30 minutes or until potatoes are cooked.

STEP 4

After 30 minutes in the oven, check potatoes are cooked and once cooked take out of the oven and sprinkle the basil over and serve!
